Instructions
- 1. - Heat olive oil in a large skillet over medium heat (about 2 minutes). 
- 2. - Add the lean ground turkey, cumin, chili powder, salt, and pepper. Cook until browned (about 5-7 minutes). 
- 3. - Stir in the mixed vegetables and salsa, cooking until the vegetables are tender (about 5 minutes). 
- 4. - Warm the corn tortillas in a separate pan or microwave until pliable (about 1-2 minutes). 
- 5. - Assemble the tacos by placing the turkey mixture in the center of each tortilla, then sprinkle with reduced-fat cheese. 
- 6. - Top with a dollop of reduced-fat sour cream and additional salsa if desired.
