“I prepped and cooked all afternoon but I still have a lot to do. Have to make the prepped eggplant dish. Prep lettuce and greens. Make smoothie. Prep pineapple and make a pumpkin cheesecake. Going to work tomorrow too. Wish I could fit in painting too. Below is chickpeas and crustless apple pie without sugar. And prepped some greens but it took a long time. I guess cooking is alot of work. Maybe it will get easier”

Instructions
- 1. - Heat olive oil in a large skillet over medium heat (about 2 minutes). 
- 2. - Add chopped onion and garlic, sauté until translucent (about 3-4 minutes). 
- 3. - Stir in diced eggplant and bell pepper, cooking until softened (about 5-7 minutes). 
- 4. - Add chickpeas, spinach (or collard greens), cumin, paprika, salt, and pepper. Cook until greens are wilted (about 5 minutes). 
- 5. - Finish with a squeeze of lemon juice and serve warm.

- 1. - 1 can (15 oz) chickpeas, drained and rinsed 
- 2. - 2 cups fresh spinach or collard greens, chopped 
- 3. - 1 medium eggplant, diced 
- 4. - 1 bell pepper, diced 
- 5. - 1 medium onion, chopped 
- 6. - 2 cloves garlic, minced 
- 7. - 1 tablespoon olive oil 
- 8. - 1 teaspoon cumin 
- 9. - 1 teaspoon paprika 
- 10. - Salt and pepper to taste 
- 11. - Juice of 1 lemon
