Instructions
- 1. - Preheat your oven to 375°F (190°C). 
- 2. - In a large skillet, cook the lean ground beef over medium heat until browned, about 5-7 minutes. Drain excess fat if necessary. 
- 3. - Add diced sweet potatoes, black beans, cumin, chili powder, salt, and pepper to the skillet. Cook for another 10 minutes until sweet potatoes are tender. 
- 4. - Spread a thin layer of enchilada sauce on the bottom of a baking dish. 
- 5. - Fill each tortilla with the beef and sweet potato mixture, roll them up, and place them seam-side down in the baking dish. 
- 6. - Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese. 
- 7. - Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly. 
- 8. - Serve with mashed avocado and fresh strawberries on the side.

- 2. - 2 medium sweet potatoes, peeled and diced 
- 3. - 1 can (15 oz) black beans, rinsed and drained 
- 4. - 8 whole wheat tortillas 
- 5. - 1 cup low-fat cheese, shredded 
- 6. - 1 cup enchilada sauce (low-sugar) 
- 7. - 2 ripe avocados, mashed 
- 8. - 1 cup fresh strawberries, for serving 
- 9. - Salt and pepper to taste 
- 10. - 1 tsp cumin 
- 11. - 1 tsp chili powder
