Instructions
1.
In a large pot, heat a splash of water or vegetable broth over medium heat. Add the chopped onion and garlic, sautéing until translucent (about 5 minutes).

Add the diced carrots, bell peppers, and zucchini to the pot. Cook for another 5-7 minutes until the vegetables start to soften.
3.
Stir in the black beans, diced tomatoes, vegetable broth, chili powder, cumin, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes, stirring occasionally.
4.
While the chili simmers, prepare the coleslaw by mixing shredded cabbage with apple cider vinegar, salt, and pepper in a bowl.
5.
Serve the chili hot, topped with coleslaw on the side and a slice of whole grain bread if desired.

1 can black beans, drained and rinsed

1 cup carrots, diced

1 cup bell peppers, diced

1 cup zucchini, diced

1 can diced tomatoes (no added sugar)

1 onion, chopped

2 cloves garlic, minced

2 cups vegetable broth (low sodium)
9.
1 tablespoon chili powder
10.
1 teaspoon cumin
11.
Salt and pepper to taste
12.
2 cups shredded cabbage (for coleslaw)
13.
1 tablespoon apple cider vinegar (for coleslaw)
14.
1 slice whole grain bread (optional)
