Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a large bowl, combine ground turkey, chopped cauliflower, spinach, onion, breadcrumbs, egg, chia seeds, garlic powder, Italian seasoning, salt, and pepper.
3.
Mix until well combined, but do not overmix to keep the meatballs tender.
4.
Form the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
5.
Bake for 20-25 minutes or until the meatballs are cooked through and golden brown.
6.
Serve with marinara sauce on top or on the side.

1/4 cup chopped spinach (optional for added fiber)

1/4 cup chopped onion
5.
1/4 cup breadcrumbs (whole wheat or almond flour for lower carbs)

1 egg
7.
1 tablespoon chia seeds
8.
1 teaspoon garlic powder
9.
1 teaspoon Italian seasoning
10.
Salt and pepper to taste

1/2 cup marinara sauce (low sugar)
