Instructions
- 1. - Heat olive oil in a skillet over medium heat (about 2 minutes). 
- 2. - Add the ground turkey or chicken and cook until browned (about 5-7 minutes). 
- 3. - Stir in taco seasoning, salt, and pepper, and cook for an additional 2 minutes. 
- 4. - Warm the cauliflower tortillas in a separate pan for about 1-2 minutes on each side. 
- 5. - Assemble the tacos by placing arugula on each tortilla, followed by the cooked turkey/chicken mixture. 
- 6. - Top with low-fat Greek yogurt, a sprinkle of Mexican cheese, and avocado slices. 
- 7. - Serve immediately and enjoy your healthy taco!

- 7. - 1 tablespoon taco seasoning (low sodium) 
- 8. - 1 tablespoon olive oil 
- 9. - Salt and pepper to taste
