Instructions
- 1. - In a large skillet, cook the ground chicken over medium heat until browned, about 5-7 minutes. 
- 2. - Add the diced green peppers, corn, and black beans to the skillet. Cook for an additional 5 minutes until the vegetables are tender. 
- 3. - Stir in the salsa and season with salt and pepper. Cook for another 3-5 minutes until heated through. 
- 4. - If using spinach, add it to the skillet and cook until wilted, about 2 minutes. 
- 5. - Warm the tortillas in a separate pan or microwave. 
- 6. - Assemble the tacos by placing the chicken mixture on each tortilla and topping with shredded cheese.

- 1. - 1 lb lean ground chicken (or tofu for a vegetarian option) 
- 2. - 1 cup black beans, rinsed and drained 
- 3. - 1 cup corn, fresh or frozen 
- 4. - 1 cup diced green peppers 
- 5. - 1 cup salsa (low-sugar) 
- 6. - 1 cup shredded low-fat cheese 
- 7. - 8 small whole grain tortillas 
- 8. - 1 cup fresh spinach (optional for added fiber) 
- 9. - Salt and pepper to taste
