Instructions
- 1. - In a skillet over medium heat, cook the lean ground beef until browned, about 5-7 minutes. Drain excess fat if necessary. 
- 2. - While the beef is cooking, prepare the avocado dressing by blending the avocado, cilantro, lime juice, salt, and pepper until smooth. 
- 3. - Warm the corn tortillas in a separate pan or microwave until pliable. 
- 4. - Assemble the tacos by placing a layer of lettuce and spinach on each tortilla, followed by the cooked ground beef, a slice of cheese, and a dollop of mayonnaise. 
- 5. - Top with chopped onions, diced tomatoes, corn, black beans, green olives, and green onions. 
- 6. - Drizzle the avocado dressing over the tacos and serve with a side salad of mixed greens, corn, black beans, and tortilla crisps.

- 10. - 1 cup black beans (canned, drained and rinsed) 
- 11. - 1/2 cup sliced green olives 
- 12. - 1/4 cup chopped green onion 
- 13. - 1/2 cup tortilla crisps (baked, if possible) 
- 14. - 1 avocado (for dressing) 
- 15. - 1/4 cup fresh cilantro 
- 16. - 1 tablespoon lime juice 
- 17. - Salt and pepper to taste
