Instructions
- 1. - Heat olive oil in a large skillet over medium heat (about 2 minutes). 
- 2. - Add diced onion and garlic, sauté until softened (about 3-4 minutes). 
- 3. - Add ground turkey, breaking it apart with a spatula, and cook until browned (about 5-7 minutes). 
- 4. - Stir in taco seasoning, black beans, and diced tomatoes. Cook for another 5 minutes until heated through. 
- 5. - Add chopped spinach and cook until wilted (about 2 minutes). 
- 6. - Season with salt and pepper to taste, then remove from heat.

- 2. - 1 can (15 oz) black beans, rinsed and drained 
- 3. - 2 cups fresh spinach, chopped 
- 4. - 1 cup diced tomatoes (fresh or canned) 
- 5. - 1 small onion, diced 
- 6. - 2 cloves garlic, minced 
- 7. - 1 tablespoon olive oil 
- 8. - 1 tablespoon taco seasoning (low sodium) 
- 9. - Salt and pepper to taste 
- 10. - Optional toppings: avocado, salsa, Greek yogurt, cilantro
