Instructions
1.
Preheat your oven to 375°F (190°C).
2.
Cut the tops off the bell peppers and remove the seeds and membranes.
3.
In a bowl, whisk the eggs and season with salt, pepper, and everything seasoning.
4.
In a skillet, lightly sauté the chopped spinach and diced tomatoes until the spinach is wilted, about 3-4 minutes.
5.
Add the prosciutto to the skillet and cook for another 2 minutes.
6.
Combine the sautéed mixture with the whisked eggs.
7.
Stuff each bell pepper with the egg mixture, packing it in gently.
8.
Place the stuffed peppers upright in a baking dish. If desired, spray with olive oil for added flavor.
9.
Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the peppers are tender.
10.
Remove from the oven and let cool for a few minutes before serving.

4 slices of prosciutto

1 cup fresh spinach, chopped
5.
1/2 cup diced tomatoes (fresh or canned)
6.
1 teaspoon everything seasoning
7.
Salt and pepper to taste

Olive oil spray (optional)
