Instructions
- 1. - In a large bowl, combine the fresh spinach, cooked chicken, sliced red onion, and diced bell pepper. 
- 2. - In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. 
- 3. - Drizzle the dressing over the salad and toss gently to combine. 
- 4. - Serve immediately or refrigerate for up to 30 minutes to let the flavors meld.

- 2. - 2 cups cooked chicken breast, shredded or diced 
- 3. - 1 medium red onion, thinly sliced
