Instructions
- 1. - In a bowl, mix the cooked quinoa with shredded pulled pork, diced onion, and spinach (if using). Season with salt and pepper. 
- 2. - Spread the low-fat mayonnaise on the whole grain wrap. 
- 3. - Layer the quinoa mixture on the wrap, followed by avocado slices. 
- 4. - Roll the wrap tightly, folding in the sides as you go to secure the filling. 
- 5. - Slice in half and serve immediately.

- 2. - 1 cup shredded pulled pork (lean) 
- 3. - 1 whole grain wrap or tortilla 
- 4. - 1/4 avocado, sliced 
- 5. - 1/4 cup diced onion

- 7. - 1 cup fresh spinach (optional for added fiber) 
- 8. - Salt and pepper to taste
