Instructions
- 1. - 1. Cook the quinoa: In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed. Fluff with a fork and set aside. 
- 2. - 2. Prepare the vegan meatballs: If using store-bought, follow package instructions. If homemade, bake or pan-fry until golden brown. 
- 3. - 3. Assemble the salad: In a large bowl, combine mixed greens, cooked quinoa, and vegan meatballs. 
- 4. - 4. Make the dressing: In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. 
- 5. - 5. Serve: Drizzle the dressing over the salad, add dollops of vegan ricotta and cashew butter, and enjoy!

- 8. - 1 tablespoon lemon juice 
- 9. - Salt and pepper to taste
