“Still in the mood for Cuban food apparently. We have this awesome food hall here and my training today was only 5 minutes from it so of course I had to go. I got a bowl with pulled chicken grilled onions black beans tostones and cilantro lime rice. I knew I couldnt eat it all so I concentrated on the chicken onions and beans eating less than 1/2 cup of rice.”

Instructions
1.
1. In a large skillet, heat olive oil over medium heat. Add sliced onions and sauté until translucent, about 5 minutes.

2. Season the chicken breasts with cumin, paprika, salt, and pepper. Add to the skillet and cook for about 10-12 minutes, turning occasionally, until cooked through.

3. Remove the chicken from the skillet and shred it using two forks.

4. Return the shredded chicken to the skillet, add black beans, and lime juice. Stir to combine and heat through for another 5 minutes.

5. Serve the pulled chicken over a bed of brown rice, garnished with chopped cilantro.

1 lb boneless, skinless chicken breasts

1 medium onion, sliced
3.
1 can (15 oz) black beans, rinsed and drained
4.
1 cup brown rice, cooked
5.
1/2 cup cilantro, chopped
6.
1 tablespoon olive oil
7.
1 teaspoon cumin
8.
1 teaspoon paprika
9.
Salt and pepper to taste
10.
Juice of 1 lime
