Instructions
- 1. - Preheat your oven to 350°F (175°C). 
- 2. - In a food processor, combine the peanuts, dates, cocoa powder (if using), vanilla extract, and salt. Blend until the mixture is crumbly but holds together when pressed. 
- 3. - In a large bowl, whisk the egg whites until frothy. 
- 4. - Fold the peanut-date mixture into the egg whites until well combined. 
- 5. - Line a baking dish with parchment paper and pour the mixture into it, spreading it evenly. 
- 6. - Bake for 20 minutes or until set. Let it cool completely before cutting into bars.

- 1. - 1 cup egg whites (about 8 large eggs) 
- 2. - 1 cup peanuts (unsalted) 
- 3. - 1 cup dates, pitted 
- 4. - 1/4 cup unsweetened cocoa powder (optional for chocolate flavor) 
- 5. - 1 tsp vanilla extract 
- 6. - Pinch of salt
