Instructions
- 1. - Preheat your oven to 350°F (175°C). 
- 2. - In a large bowl, mix the Greek yogurt, crushed pineapple, applesauce, eggs, and vanilla extract until well combined. 
- 3. - In another bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt. 
- 4. - Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing. 
- 5. - If using, fold in the chopped walnuts or almonds for added protein. 
- 6. - Spoon the batter into a greased or lined muffin tin, filling each cup about 2/3 full. 
- 7. - Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. 
- 8. - Allow the muffins to cool for a few minutes before transferring them to a wire rack.

- 4. - 1/2 cup honey or maple syrup (optional for sweetness) 
- 5. - 1/2 cup unsweetened applesauce 
- 6. - 2 large eggs 
- 7. - 1 teaspoon baking powder 
- 8. - 1 teaspoon baking soda 
- 9. - 1/2 teaspoon salt 
- 10. - 1 teaspoon vanilla extract 
- 11. - 1/2 cup chopped walnuts or almonds (optional for added protein and healthy fats)
