Instructions
- 1. - Preheat your oven to 400°F (200°C). 
- 2. - In a large bowl, toss the zucchini, yellow squash, onion, and garlic with olive oil, Italian seasoning, salt, and pepper. Spread the veggies on a baking sheet and roast for 20 minutes, or until tender. 
- 3. - While the veggies are roasting, cook the high-protein pasta according to package instructions. Drain and set aside. 
- 4. - In a saucepan, combine the low-fat cheese and almond milk over medium heat. Stir until the cheese is melted and the mixture is smooth. 
- 5. - Add the cooked pasta and roasted veggies to the cheese sauce. Stir to combine, and add fresh spinach if using. Cook for an additional 2-3 minutes until heated through. 
- 6. - Serve warm and enjoy your healthy mac n cheese!

- 11. - 1 cup fresh spinach (optional for added fiber)
