Instructions
1.
1. Preheat your grill or oven to medium-high heat.

2. Rub the jerk seasoning evenly over the chicken breasts. Let them marinate for at least 15 minutes.

3. While the chicken is marinating, rinse the brown rice under cold water. In a pot, combine the rice and water (or broth) and bring to a boil. Reduce heat, cover, and simmer for about 30 minutes or until the rice is tender.

4. In a bowl, combine the diced mango, red bell pepper, red onion, lime juice, cilantro, salt, and pepper to make the mango salsa. Set aside.

5. Grill the chicken for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F/75°C).

6. Once the chicken is cooked, let it rest for a few minutes before slicing.

7. Serve the jerk chicken over a bed of brown rice, topped with mango salsa.
