Instructions
- 1. - In a bowl, whisk together the eggs, almond milk, vanilla extract, and cinnamon until well combined (about 2 minutes). 
- 2. - Heat a non-stick skillet over medium heat and lightly coat with cooking spray. 
- 3. - Dip each half of the English muffin into the egg mixture, allowing it to soak for a few seconds on each side. 
- 4. - Place the soaked muffins in the skillet and cook for about 3-4 minutes on each side, or until golden brown. 
- 5. - Spread the peanut butter on top of the cooked French toast and add fresh fruit as a topping.
