"Good job Lisa! Youre halfway to your weekly target of fiber and lean protein-rich meals. Your dinner sounds delicious and well-balanced with the chicken skewer providing lean protein and the asparagus and peppers adding a good dose of fiber. The baby potatoes are a nice touch just remember to keep an eye on the seasoning as some can be high in sodium. I hope you enjoyed your meal as much as I enjoyed hearing about it. Keep finding joy in creating these healthy meals!"

  2. Preheat the grill to medium-high heat.
  3. Thread the marinated chicken, bell peppers, onion, and asparagus onto skewers, alternating ingredients.
  4. In a separate pot, boil the baby potatoes until tender, about 10-15 minutes. Drain and season with garlic powder, salt, and red pepper flakes.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Serve the skewers with the seasoned baby potatoes on the side.
