“One more to go! Your choice of grilled chicken is a great source of lean protein and the sweet potato mix adds a nice touch of fiber. The fruits youve included especially the watermelon and cantaloupe are a refreshing way to add some natural sweetness to your meal love it!”
Instructions
- 1. - Preheat your grill to medium-high heat (about 375°F). 
- 2. - In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper. 
- 3. - Coat the chicken breasts with the seasoning mixture and let them marinate for 10 minutes. 
- 4. - While the chicken is marinating, boil the diced sweet potatoes and potatoes for about 10 minutes until slightly tender. 
- 5. - Drain and toss the potatoes with a little olive oil, salt, and pepper. 
- 6. - Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F. 
- 7. - In the last 5 minutes of grilling, add the mixed vegetables to the grill. 
- 8. - Once everything is cooked, serve the grilled chicken with the potato mix and a side of fresh fruit (papaya, watermelon, cantaloupe, pineapple). 
- 9. - Garnish with fresh herbs if desired.

- 2. - 2 medium sweet potatoes, diced 
- 3. - 2 medium potatoes, diced 
- 4. - 2 cups mixed vegetables (carrots, bell peppers, etc.) 
- 5. - 1 cup papaya, diced 
- 6. - 1 cup watermelon, diced 
- 7. - 1 cup cantaloupe, diced 
- 8. - 1 cup pineapple, diced 
- 9. - 2 tablespoons olive oil 
- 10. - 1 teaspoon garlic powder 
- 11. - 1 teaspoon paprika 
- 12. - Salt and pepper to taste 
- 13. - Fresh herbs (optional, for garnish)
