Instructions
1.
1. Preheat your grill or grill pan over medium-high heat.

2. Season the chicken breasts with olive oil, garlic powder, salt, and pepper.
3.
3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

4. While the chicken is grilling, prepare the salad by combining the chopped romaine lettuce, spinach (if using), and cooked brown rice in a large bowl.

5. Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.

6. Add the sliced chicken to the salad, drizzle with light Caesar dressing, and toss gently to combine.

7. Top with whole grain croutons and serve immediately.
