Instructions
- 1. - Toast the whole grain bread slices until golden brown (about 3-5 minutes). 
- 2. - While the bread is toasting, dice the tomatoes and season with salt and pepper. 
- 3. - Spread a generous layer of cottage cheese on each slice of toasted bread. 
- 4. - Top with the seasoned diced tomatoes. 
- 5. - Drizzle balsamic glaze over the top. 
- 6. - Garnish with fresh basil leaves if desired, and serve immediately.
