Instructions
- 1. - 1. In a large skillet, heat olive oil over medium heat. Add sliced onions and bell peppers, sautéing for about 5 minutes until softened. 
- 2. - 2. Season the chicken breast with cumin, chili powder, salt, and pepper. Add to the skillet and cook for 6-7 minutes on each side until fully cooked. 
- 3. - 3. Remove the chicken from the skillet and shred it using two forks. Return the shredded chicken to the skillet. 
- 4. - 4. Stir in the black beans and salsa, cooking for an additional 5 minutes until heated through. 
- 5. - 5. Serve the chicken mixture over a bed of brown rice and garnish with chopped green onions.

- 3. - 1 can black beans, rinsed and drained 
- 4. - 1 red bell pepper, sliced 
- 5. - 1 green bell pepper, sliced 
- 6. - 1 onion, sliced 
- 7. - 2 green onions, chopped 
- 8. - 1 cup salsa (low-sugar) 
- 9. - 1 tablespoon olive oil 
- 10. - 1 teaspoon cumin 
- 11. - 1 teaspoon chili powder 
- 12. - Salt and pepper to taste
