Instructions
- 1. - In a large bowl, combine the mixed greens, chickpeas, cucumber, radish, carrot, pico de gallo, cilantro, and onion. 
- 2. - Add the cooked brown rice and cara cara orange segments. 
- 3. - Drizzle with lime juice and season with salt and pepper to taste. 
- 4. - Toss everything gently to combine and serve immediately.

- 1. - 4 cups mixed greens (lettuce, spinach) 
- 2. - 1 cup cooked chickpeas (canned or boiled) 
- 3. - 1 cup diced cucumber 
- 4. - 1 cup diced radish 
- 5. - 1 cup grated carrot 
- 6. - 1/2 cup pico de gallo (fresh salsa) 
- 7. - 1/4 cup chopped cilantro 
- 8. - 1/4 cup diced onion 
- 9. - 1 cup cooked brown rice 
- 10. - 1 medium cara cara orange, segmented 
- 11. - Juice of 1 lime 
- 12. - Salt and pepper to taste
