Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    Add diced chicken and cook until browned and cooked through, about 5-7 minutes.

  • 3.

    Stir in sliced onion and carrots, cooking for another 3-4 minutes until softened.

  • 4.

    Add chopped kale and cook until wilted, about 2 minutes.

  • 5.

    Pour in the low-sodium peanut sauce and stir to combine, cooking for an additional 2 minutes.

  • 6.

    Serve over cauliflower rice, garnishing with additional peanut sauce if desired.
