Instructions
- 1. - In a skillet, heat olive oil over medium heat. Add shrimp and cook for 2-3 minutes until pink and opaque. 
- 2. - In a large bowl, combine shredded chicken, cooked shrimp, chopped lettuce, shredded carrots, and cherry tomatoes if using. 
- 3. - Drizzle with lemon juice, and season with salt and pepper. Toss gently to combine. 
- 4. - Serve immediately or refrigerate for up to 2 hours before serving.
