Instructions
- 1. - Heat olive oil in a skillet over medium heat (about 2 minutes). 
- 2. - Add diced onion and bell pepper, sauté until softened (about 3-4 minutes). 
- 3. - Stir in chopped spinach and cook until wilted (about 1-2 minutes). 
- 4. - In a separate skillet, place one Lavash bread and sprinkle half of the cheese on one half. 
- 5. - Layer half of the chicken mixture on top of the cheese, then fold the Lavash over. 
- 6. - Cook for 3-4 minutes on each side until golden brown and cheese is melted. 
- 7. - Repeat with remaining ingredients to make additional quesadillas. 
Ingredients
- 1. - 2 cups cooked, shredded chicken breast 
- 2. - 4 Joseph's Lavash breads 
- 3. - 1 cup low-fat shredded cheese (like mozzarella or cheddar) 
- 4. - 1 cup spinach, chopped 
- 5. - 1/2 bell pepper, diced 
- 6. - 1/2 onion, diced 
- 7. - 1 tablespoon olive oil 
- 8. - Salt and pepper to taste
