Instructions
- 1. - 1. Preheat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil. 
- 2. - 2. In a bowl, mix the shredded chicken, cheese, spinach, bell peppers, cumin, paprika, salt, and pepper until well combined. 
- 3. - 3. Place one chickpea flour tortilla in the skillet and spread half of the chicken mixture evenly over it. 
- 4. - 4. Top with another tortilla and cook for about 3-4 minutes until golden brown. 
- 5. - 5. Carefully flip the quesadilla and cook for another 3-4 minutes until the cheese is melted and the tortilla is crispy. 
- 6. - 6. Remove from the skillet, cut into wedges, and serve warm.

- 2. - 1 cup Monterey Jack cheese, shredded 
- 3. - 4 chickpea flour tortillas 
- 4. - 1 cup spinach, chopped 
- 5. - 1/2 cup bell peppers, diced 
- 6. - 1/2 teaspoon cumin 
- 7. - 1/2 teaspoon paprika 
- 8. - Salt and pepper to taste 
- 9. - Cooking spray or olive oil for grilling
