Instructions
1.
1. Preheat your oven to 400°F (200°C).

2. In a large bowl, combine the chicken breasts, olive oil, garlic, oregano, salt, pepper, and lemon juice. Toss to coat the chicken evenly.

3. On a baking sheet, arrange the chicken breasts and surround them with broccoli, bell peppers, and carrots.

4. Roast in the oven for 25 minutes or until the chicken is cooked through and the vegetables are tender.

5. Serve hot, garnished with fresh herbs if desired.

4 boneless, skinless chicken breasts (about 1.5 lbs)

1 cup bell peppers, sliced (any color)

1 cup carrots, sliced
