Instructions
- 1. - Heat olive oil in a large skillet over medium heat (about 2 minutes). 
- 2. - Add sliced onions and bell peppers, sautéing until softened (about 5 minutes). 
- 3. - Stir in the shredded chicken and fajita seasoning, cooking until heated through (about 5 minutes). 
- 4. - If using, add fresh spinach and cook until wilted (about 2 minutes). 
- 5. - Serve hot, garnished with fresh cilantro if desired.
