Instructions
- 1. - Preheat your oven to 375°F (190°C). 
- 2. - In a large bowl, mix the shredded chicken, cumin, garlic powder, salt, and pepper. 
- 3. - Spread a thin layer of enchilada sauce on the bottom of a baking dish. 
- 4. - Fill each tortilla with the chicken mixture and a handful of chopped spinach, then roll them up tightly. 
- 5. - Place the rolled tortillas seam-side down in the baking dish. 
- 6. - Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese. 
- 7. - Bake for 20-25 minutes until the cheese is melted and bubbly. 
- 8. - Serve hot, topped with Greek yogurt and sliced jalapeños.

- 2. - 8 whole wheat tortillas 
- 3. - 1 cup low-sodium enchilada sauce 
- 4. - 1 cup low-fat Greek yogurt (for sour cream substitute) 
- 5. - 1 cup shredded low-fat cheese 
- 6. - 1 cup chopped spinach 
- 7. - 1 jalapeño, sliced 
- 8. - 1 teaspoon cumin 
- 9. - 1 teaspoon garlic powder 
- 10. - Salt and pepper to taste
