"I reworked this recipe to have more protein and less carbs. Its a very loose interpretation of a spinach chicken enchilada bowl. A serving is 3oz 2% cottage cheese 2oz spinach 1/3c beans 4oz chicken & two corn tortillas that I spritzed with coconut oil and tossed in the air fryer."
