Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, toss the diced sweet potatoes and halved Brussels sprouts with olive oil, salt, and pepper.

  • 3.

    Spread the vegetables on a baking sheet in a single layer and roast for 20 minutes.

  • 4.

    While the vegetables are roasting, season the chicken breasts with salt and pepper.

  • 5.

    In a skillet over medium heat, sear the chicken breasts for 3-4 minutes on each side until golden brown.

  • 6.

    Transfer the chicken to the baking sheet with the vegetables and roast for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C).

  • 7.

    Remove from the oven and let rest for a few minutes before serving.

  • 8.

    Drizzle chimichurri sauce over the chicken and vegetables before serving.
