Instructions
1.
1. In a large pot, bring salted water to a boil and cook the whole wheat gnocchi according to package instructions (about 3-5 minutes). Drain and set aside.

2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

3. Add sliced mushrooms to the skillet and cook for 5 minutes until they are tender.

4. Add the cooked chicken breast (shredded or diced) to the skillet and stir to combine.

5. Stir in the sun-dried tomatoes and Italian seasoning, cooking for another 2 minutes.

6. Finally, add the spinach and cooked gnocchi to the skillet, mixing everything together until the spinach wilts (about 2-3 minutes).

7. Season with salt and pepper to taste, and serve warm.
