Instructions
1.
1. In a large bowl, combine the shredded chicken, mixed vegetables, and spinach if using.

2. Add the pico de gallo and mix well to coat all ingredients evenly.

3. Season with salt and pepper to taste.

4. Serve immediately, or chill in the refrigerator for a refreshing cold salad.
