Instructions
1.
1. Cook the brown rice according to package instructions (about 20 minutes).

2. While the rice is cooking, heat a non-stick skillet over medium heat.

3. Season the chicken breast with garlic powder, ginger, salt, and pepper.

4. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

5. Remove the chicken from the skillet and let it rest for a few minutes before slicing.

6. In the same skillet, add the broccoli and carrots. Sauté for about 5-7 minutes until tender.

7. Pour in the light coconut milk and lime juice, stirring to combine. Let it simmer for 2-3 minutes.

8. Serve the sliced chicken over the cooked rice, topped with the coconut lime sauce and vegetables.
