Instructions
- 1. - Preheat your oven to 350°F (175°C). 
- 2. - In a bowl, whisk together the eggs, salt, and pepper until well combined. 
- 3. - In a skillet, heat the olive oil over medium heat. Add the chopped broccoli and sauté for about 3-4 minutes until slightly tender. 
- 4. - Pour the egg mixture over the broccoli in the skillet. Add the mozzarella cherry tomatoes and optional spinach on top. 
- 5. - Cook on the stove for 2-3 minutes until the edges start to set, then transfer the skillet to the preheated oven. 
- 6. - Bake for 10-12 minutes or until the frittata is fully set and lightly golden on top. 
- 7. - Remove from the oven and let it cool for a few minutes before slicing. Serve with coleslaw on the side.

- 1. - 4 large eggs 
- 2. - 1 cup broccoli florets, chopped 
- 3. - 3 mozzarella cherry tomatoes, halved 
- 4. - 1/2 cup coleslaw mix (cabbage and carrots) 
- 5. - 1 tablespoon olive oil 
- 6. - Salt and pepper to taste 
- 7. - Optional: 1/4 cup chopped spinach for added fiber
