Instructions
1.
In a large skillet, heat sesame oil over medium heat (about 1-2 minutes).

Add minced garlic and ginger, sauté for 1 minute until fragrant.
3.
Add the lean ground beef, breaking it apart with a spatula. Cook until browned (about 5-7 minutes).
4.
Stir in the chopped broccoli, cabbage, and carrots. Cook for another 5 minutes until vegetables are tender.
5.
Add soy sauce, salt, and pepper to taste. Mix well and cook for an additional 2 minutes.
6.
If using, stir in chopped spinach just before serving for added fiber.

4 cups chopped broccoli

2 cups shredded cabbage
4.
1 cup shredded carrots
5.
2 cloves garlic, minced
6.
1 tablespoon ginger, minced
7.
2 tablespoons low-sodium soy sauce
8.
1 tablespoon sesame oil
9.
Salt and pepper to taste
10.
Optional: 1 cup spinach, chopped
