Instructions
- 1. - 1. Preheat your grill or skillet over medium-high heat. 
- 2. - 2. Season the lean beef with salt, pepper, garlic powder, and paprika. 
- 3. - 3. Cook the beef for about 5-7 minutes on each side, or until it reaches your desired doneness. Let it rest for a few minutes before slicing. 
- 4. - 4. While the beef is cooking, prepare the vegetables. In a large bowl, combine the chopped kale and shredded carrots. Drizzle with olive oil and toss to coat. 
- 5. - 5. Slice the baked sweet potatoes in half and place them on plates. 
- 6. - 6. Assemble the bowls by placing a generous portion of the kale and carrot mixture, followed by sliced beef on top.
