Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt, pepper, and garlic powder. Cook for about 10-15 minutes until golden and tender, stirring occasionally.

  • 3.

    In the same skillet, add the lean ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

  • 4.

    Stir in the black beans, corn, salsa, cumin, and cook for another 5 minutes until heated through.

  • 5.

    While the beef mixture is cooking, spread the Brussels sprouts on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 15-20 minutes until crispy.

  • 6.

    In the last few minutes of cooking, add the peas to the beef mixture and stir until heated.

  • 7.

    Warm the corn tortillas in a dry skillet or microwave.

  • 8.

    To serve, layer the beef mixture on the tortillas, add roasted Brussels sprouts on the side, and enjoy!

    1 cup salsa

  • 5.

    4 corn tortillas

    2 cups Brussels sprouts, halved

  • 7.

    1 cup peas, frozen or fresh

  • 8.

    2 medium potatoes, diced

  • 9.

    1 tablespoon olive oil

  • 10.

    Salt and pepper to taste

  • 11.

    1 teaspoon garlic powder

  • 12.

    1 teaspoon cumin
