“Monday meal prep!! Note my little dog waiting nearby in hopes some food falls on the ground I made taco meat steak air fryer potatoes steamed artichokes broccolini and also a base of ham/mushroom/asparagus/bell peppers sauted so I can just add eggs throughout the week when Im pinched for time. Ohand perhaps THIS is another contributing factor as to why my back is all flared up”

Instructions
1.
Heat olive oil in a large skillet over medium-high heat (about 2 minutes).
2.
Add the sliced beef and cook until browned, about 5-7 minutes. Remove and set aside.
3.
In the same skillet, add garlic and ginger, sauté for 1 minute until fragrant.
4.
Add broccoli, bell peppers, asparagus, and mushrooms. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
5.
Return the beef to the skillet, add soy sauce, and stir to combine. Cook for an additional 2-3 minutes.
6.
Season with salt and pepper to taste, and serve hot.

1 lb lean beef (sirloin or flank steak), sliced thinly

4 cups broccoli florets

2 cups bell peppers, sliced
4.
1 cup asparagus, chopped
5.
1 cup mushrooms, sliced
6.
2 cloves garlic, minced
7.
1 tablespoon low-sodium soy sauce
8.
1 tablespoon olive oil
9.
1 teaspoon ginger, grated
10.
Salt and pepper to taste
