Monday meal prep!! Note my little dog waiting nearby in hopes some food falls on the ground I made taco meat steak air fryer potatoes steamed artichokes broccolini and also a base of ham/mushroom/asparagus/bell peppers sauted so I can just add eggs throughout the week when Im pinched for time. Ohand perhaps THIS is another contributing factor as to why my back is all flared up

Instructions

  • 1.

    Heat olive oil in a large skillet over medium-high heat (about 2 minutes).

  • 2.

    Add the sliced beef and cook until browned, about 5-7 minutes. Remove and set aside.

  • 3.

    In the same skillet, add garlic and ginger, sauté for 1 minute until fragrant.

  • 4.

    Add broccoli, bell peppers, asparagus, and mushrooms. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

  • 5.

    Return the beef to the skillet, add soy sauce, and stir to combine. Cook for an additional 2-3 minutes.

  • 6.

    Season with salt and pepper to taste, and serve hot.

    1 lb lean beef (sirloin or flank steak), sliced thinly

    4 cups broccoli florets

  • 3.

    2 cups bell peppers, sliced

  • 4.

    1 cup asparagus, chopped

  • 5.

    1 cup mushrooms, sliced

  • 6.

    2 cloves garlic, minced

  • 7.

    1 tablespoon low-sodium soy sauce

  • 8.

    1 tablespoon olive oil

  • 9.

    1 teaspoon ginger, grated

  • 10.

    Salt and pepper to taste
