Instructions

  • 1.

    1. Preheat your oven to 400°F (200°C).

  • 2.

    2. Season the beef steak with salt, pepper, garlic, and ginger. Let it marinate for 10 minutes.

  • 3.

    3. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the marinated beef and sear for 3-4 minutes on each side until cooked to your liking. Remove from the skillet and let it rest.

  • 4.

    4. In the same skillet, add the remaining olive oil and sauté the broccoli for about 5 minutes until tender but still crisp.

  • 5.

    5. Add the roasted root vegetables to the skillet and drizzle with soy sauce. Stir to combine and heat through for another 2-3 minutes.

    6. Slice the beef and serve it alongside the broccoli and root vegetables.

    2 cups assorted roasted root vegetables (carrots, sweet potatoes, beets)

    2 cloves garlic, minced

  • 6.

    1 tablespoon low-sodium soy sauce

  • 7.

    1 teaspoon ginger, grated

  • 8.

    Salt and pepper to taste
