Instructions
- 1. - 1. Toast the whole grain bread slices until golden brown (about 3-5 minutes). 
- 2. - 2. While the bread is toasting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork and season with salt and pepper. 
- 3. - 3. In a non-stick skillet, cook the eggs to your liking (fried, poached, or scrambled) over medium heat (about 5 minutes). 
- 4. - 4. Spread the mashed avocado evenly on each slice of toasted bread. 
- 5. - 5. Top each slice with a cooked egg. 
- 6. - 6. Add optional toppings like red pepper flakes, fresh herbs, or a squeeze of lemon juice for extra flavor.
