2-Minute Flourless English Muffin With Quick Tofu Cream Cheese

Gather your ingredients

For the muffin: In a blender or bullet, combine the oats, chia seeds, baking powder, and salt. Blend on high until finely ground. Transfer to a bowl, add the applesauce and nondairy milk and mix to form a sticky dough.
Step 3
Spray the inside of a small ramekin with cooking spray and place the dough in the ramekin and flatten. Microwave on high for 1 1/2 minutes then check and continue cooking in 10 second bursts until set. Can also be baked at 350 degrees F for 12-15 minutes. Let sit for about 5 minutes before removing, slice in half, toast, and place on a serving plate.

Meanwhile make the cream cheese by adding all the ingredients to a bullet and blend until creamy.

Spread cream cheese on the toasted muffin and top with sliced fruit or other toppings as desired.

  • 1 teaspoon lemon juice
  • Pinch salt

For the topping (optional):

  • Berries
