

Step 1
Prepare all of your ingredients.

Spray the inside of a large microwave-safe mug, custard cup or ramekin with cooking spray. Add eggs and milk to the mug and using a fork, mix until the yolks are combined.

Add in spinach, tomatoes, mushroom, broccoli, basil, and pepper to taste. Gently stir to combine. Fill the mug to 2/3 full and don’t fill to the brim because the eggs will fluff up and expand during the cooking process.

Add mug to the microwave and cook on high for 1 minute.

Step 5
Stir the mixture and microwave for an additional minute or until the eggs are almost set.

Step 6
Cooking times will vary due to variations in microwave heating times. Remove from microwave and sprinkle with optional toppings if desired.
